Where Do the Bubbles Come From?
What’s in Equinox Sparkling Wine? – it’s made from two types of grapes, and then yeast is added to produce the bubbles. We make Blanc de Blanc which is made from 100% Chardonnay grapes. We also make non-vintage brut, usually a blend of both Pinot Noir and Chardonnay from different vintages.
- Pinot Noir: A white wine made from a red grape. This sparkling wine has a light honey flavor and often contains toasty organic notes of forest earth and smoke.
- Chardonnay: A classic straw color from a green chardonnay grape. This sparkling wine has citrus, apple/pear or apricot flavors.
- Yeast: added to the primary and secondary fermentation process adds the bubbles, viscosity (texture and mouth feel), a yeasty sour dough vanilla aroma to the “nose” and “brings out” flavorful nuances in the taste.
