Methode Champenoise
Synthesis
Our style can best be expressed as a synthesis of ripe, Santa Cruz Mountain fruit character (enhanced by
barrel-fermentation) and the traditional "methode champenoise," bottle-fermentation and extended (tirage) ageing on the
yeast. The wines are finished with minimal or zero dosage to better display the marriage of the cuvee and the yeast character
fro the extended tirage.
Each bottling of Equinox is distinct, reflecting diverse vineyards and the unique character of the vintage.
